Planted in predominantly clay soils, with low production potential, the Vicentino grapes bear their best attributes. The low productivity imposed by the land enhances the quality of the grapes, promoting an optimum mix of organic acids, sugars and phenolic compounds. The achievement of this balance between quantity and quality, together with the mild climate, allows us to aim for excellency. Originally from cold climates, Pinot Noir has found the perfect conditions to express its most distinguishing characteristics: freshness and elegance.
Handpicked. Whole bunch pressing. Fermentation took place in stainless still tank. Ageing for 6 months in same stainless steel tank with fine lees.
Light pink colour. The aroma is predominantly fruity, with notes of grapefruit, raspberries, and fresh watermelon. In the palate it is smooth, with volume, presenting a balanced and refreshing acidity. The end is long and saline.
Very versatile. Great pairings with staters as pumpkin soup, humus, barnacles, mussels, or beef carpaccio. Also surprising with Indian and Nepalese cuisine.
We recommend serving it cool, at around 10º C.
