Grape Varieties: Pinot Noir
Soils: Clay, sand and schist soils.
Fermentation: Handpicked harvest followed by bunch selection at the winery. After tow days of cold maceration the fermentation happens at 22ºC and it was conducted with very light extraction to preserve the grape’s character.
Ageing: For 5 months in stainless steel tank.
Tasting Notes: The appealing colour is a light ruby. Expresses the grape’s typical aromas and is dominated by strawberries, plums and cherries fruity flavours, in a slightly vegetal background. The palate is vibrant and finishes with a slight hint of salt.
Food Pairing: It pairs wonderfully with the typical Portuguese sardines, barbecue, vegetarian and oriental cuisine. Try it with strawberry sorbet. We recommend serving it cool, at around 12º C.
